5 Tbsp tarragon mustard ( or Dijon)
5 Tbsp white wine vinegar
1/8 tsp salt ( I use Maldon)
1 cup olive oil
2 Tbsp Fines Herbs
1 tsp chopped capers
1 tsp minced shallots or green onion
Mix vinegar, salt and mustard together and then drizzle in the olive oil.
After this is well blended add the dried herbs, capers, and shallots.
A Ravigote can be used on a green salad, steamed greens, and is delicious on fish/seafood. It is often used as a condiment with ham!
