    Pork Tenderloin with Apples & Agrodulce

    Ingredients

    AGRODULCE

    1/4 cup balsamic vinegar

    2 Tbsp maple syrup ( we like the whisky barrel but any can be used)

    3 Tbsp minced onion or shallots

    2 Tbsp chopped raisins

    Pinch chili pepper

    PORK

    2 lbs of pork tenderloin ( 2 tenderloins)

    Pinch of  salt/ pepper

    1.5 Tbsp olive oil

    2 tsp red wine vinegar

    2 apples sliced

    Directions

    Agrodulce

    Put everything together in a sauce pan and bring to a boil , reduces to a simmer for 8-10 minutes. It will continue to thicken while it cools

    Pork

    Season the pork with salt and pepper. Heat 1 tbsp oil in a large cast-iron skillet (or any pan that can go in the oven) over medium-high heat. Add pork to pan, and cook, turning the pork over and browning each side. Place apples in the pan and vinegar, and then place pan in oven; bake at 450° for 15 - 20 minutes or until a thermometer registers 155° (slightly pink). Remove from oven; let stand 10 minutes. Slice pork crosswise into 1/2-inch-thick slices. Serve with sauce.
