    Roasted Tomato Salsa

    Ingredient:

    1 pint cherry tomatoes

    2 purple onion - quatered

    3 whole garlic cloves

    1 Tbsp olive oil

    1 tsp wine vinegar

    1/2 tsp chipotle chili powder

    salt to taste

    Directions:

    pre heat oven to 375º

    Place cherry tomatoes, onion, garlic on a baking sheet - drizzle olive oil and sprinkle with salt ( any salt will do) and toss to coat.

    Roast for 25 minutes in a preheated oven - then put everything in a food processor and pulse until blended. (if you don't have one, then let everything cool down , remove the onions and garlic and chop, add them back to the tomatoes and use a potato masher to crush everything).

    Add the wine vinegar and chipotle pepper and salt.

    This is perfect for tacos, nachos, scrambled egg fajitas, or on toast with goat cheese.
