Saffron & Saskatoon Berry Rice
Ingredients
2 cups basmati rice
1/4 cup dried Saskatoon berries - soaking in 1 cup very, hot water
1 1/2 cups water
1 tsp cumin seeds
1 Tbsp olive oil
a pinch of saffron
1 cup chopped, fresh parsley
salt & pepper to taste
Directions
In a heavy, bottomed pot heat the olive oil over medium heat. Add the cumin seeds and let them cook a little bit. Then add the rice and coat with the olive oil, keep stirring for 30 seconds.
Then stir in the reconstituted Saskatoon berries and the water to the pot. Then add the rest of the water and bring to a boil. Simmer for the amount of time on the rice directions.
When the rice is cooked, take it off the heat, and add in the saffron/water and stir everything together. Place a tea towel over the pot and put the lid back on. Let it sit for 10-15 minutes. Add in the freshly chopped parsley and season with salt & pepper.
Serve as a side.
