Stove Top "Baked Beans" with Bourbon Maple Syrup.
Ingredients
2 tins of white navy beans
1 Large Jar of Tomato Passata ( around 500ml)
1 Tbsp Sweet Smoked Paprika
1 medium onion - Diced small
1 Tbsp of Balsamic Vinegar - or good red wine vinegar
6 Tbsp of Bourbon Maple Syrup
Pinch of Salt
Olive Oil
Directions
Heat a cast iron frying pan on the stove and add in a drizzle of olive oil. Pour in the tomato passata and cook over medium heat for 10 minutes stirring constantly - Cook down the tomatoes until they change colour and then add the balsamic vinegar and continue to stir. Add the onion and continue cooking until the onions soften.
Add the maple syrup and a pinch of salt. Drain the beans and add them to the tomato mixture and stir to incorporate. Cover, turn down the heat and continue cooking for 10-15 minutes - Stir to make sure it doesn't burn. Take off the heat and let sit for 10 minutes. Readjust the seasoning to taste, and serve.
Great for beans on toast!
