    Apple Pie

    Ingredients

    2- 9 inch pie crusts ( from scratch or frozen)

    7 Apples - peeled and sliced

    1/2 cup white sugar

    1/2 cup brown sugar

    1 tsp BAKING SPICE ( if you want something different try 1/2 tsp of dried THYME instead)

    1 Tbsp lemon juice

    1 lightly beaten egg ( for egg wash)

    2 Tbsp of sugar for dusting ( optional)

    Instructions

    Preheat the oven to 400º ( this is not to prebake crust if that is called for -this is for the pie baking)

    Prepare pie crust - follow directions on store bought ones, or roll out homemade one and place in a pie dish ( if making from scratch make sure your dough comes upto room temp before rolling out on floured surface)

    Mix together - apples, sugars, spices, lemon juice. - Make sure all the apples slices are coated.

    Spoon the slices into the pie dish - leave the juices at the bottom of the bowl so the bottom crust doesn't get soggy. Cover the pie with the top crust - trim the edges, seal the top and bottom edges together all around the pie - cover the edges with a pie shield or tinfoil so the edges don't over bake.

    Cut slits in the top to allow for steam release ( pick a pattern you like) - brush the top with the egg wash and dust with sugar - please the pie on a baking sheet.

    Bake the pie for 25 minutes in the 400º oven, then remove the pie shield ( tinfoil) and reduce the heat to 375º and continue baking for another 30-35 minutes. When the juices are bubbling take out the pie and allow to cool.
