Iced Negus
Ingredients
- 750ml white port*
- ice cubes
- juice of 1/2 a lemon
- freshly ground nutmeg for garnish ( optional)
Spiced Syrup
- 500ml water
- 150g caster sugar
- 1 cinnamon stick
- 10 based cardamom pods
- ½ tsp pink peppercorns
- 2 whole ( or 10 pieces) star anise
- Pared zest of 1 lemon
- Pared zest of 1 orange
Directions
make the spiced syrup by putting all the spices, sugar and water in a pot and slowly heat it up until the sugar dissolves - then bring to a simmer for 5 minutes. take it off the heat, cool it completely and strain out the spices.
To make the cocktail to 2:3 syrup to port and pour over ice in a tall glass! Garnish with nutmeg.
