    Morning Muffins with Carrots, Oats, and Greek Yogurt

    PREHEAT OVER TO 350º and grease your muffin tin - this makes 12 regular sized muffins.

     

    Ingredients

    1 1/4 cup Flour ( i used all purpose GF)

    1 cup rolled oats

    1.5 tsp baking powder

    1/2 tsp baking soda

    2.5 tsps BAKING SPICE

    1/4 tsp salt

    2 large eggs

    1/2 cup plain greek yogurt

    1/4 cup BOURBON MAPLE SYRUP

    1/4 cup milk ( I used dairy)

    2 tsp VANILLA EXTRAT

    1 cup grated carrot

    1/2 cup pumpkin seeds

    Directions

    Mix together: flour, oats, baking soda, baking powder, salt, and spices.

    Mix together: eggs, yogurt, maple syrup, milk, extract, carrots.

    Then fold the wet ingredients into the dry ingredients until everything is incorporated.

    Place in the prepared muffin tin - then press some pumpkin seeds into the batter.

    Bake for 20-22 minutes.
