1.5 cups of greek yogurt
1 tsp lemon zest
1 tbsp maple syrup
1/2 cup sliced strawberries
2 Tbsp crushed pistachios
Blend together the yogurt, maple syrup, and lemon zest.
Spread on parchment paper lined baking tray and top with strawberry slices and crushed pistachios.
Place in the freezer for minimum of 3 hrs. Break into pieces by slicing or breaking with your hands. Let rest at room temperature for 10 minutes and enjoy!
